1. A recognition of the fairy-like postures of Dragon Well tea

Dragon Well tea leaves are smooth and flat. Generally speaking, Dragon Well tea collected before Clear and Bright is with the highest quality, which is also known as Mingqian Dragon Well tea. Dragon Well tea picked before Grain Rain is less good, which is called Yuqian Dragon Well tea; and tea plucked after Grain Rain cannot be rated as top grade tea.

2. Appreciating the living water

The longjing tea and water in Tiger Spring are the two wonders of the West Lake area in Hangzhou. It is advisable to infuse longjing tea with water from Tiger Spring.

However, not everybody can get water from Hangzhou, so you might as well adopt distilled water or pure water such as Nongfu mineral water with some sweet taste. Besides, filtered water in family may also be employed.

Water temperature: it is proper if the water temperature is about 80°C. The less hot the water is, the greener the tea leaves are. If the water temperature is excess high, tea leaves may easily be spoiled and the tea soup will turn yellow, which tastes bitter. Provided the water temperature is too low, the aroma won’t be rich. A tip is that, water at 80 degrees to infuse high quality green teas refers to the boiled water’s temperature after being cooled. If the water is sterilized, it is suggested to warm it to proper temperature.
